This is a South African recipe, originating from the Dutch. Deceptively simple, unbelievably divine.
My beautician asked me to make this for her.

Here's the rec:
Malva Pudding

300ml cake flour
125ml milk
45ml smooth apricot jam
30g butter
100ml sugar
5ml bicarbonate of soda
1 egg
1ml salt
20ml white vinegar

Sauce
375ml fresh cream
200ml sugar
125g butter
1ml salt

Preheat oven 180c.
Mix all the sauce ing. tog. bring to boil and simmer,stirring all the time for 2 mins.

Cream butter and sugar tog.until light and creamy.
Add egg and beat till light and fluffy.
Beat in jam.
Dissolve the bicarb. in the milk.
Sift the flour, and salt tog.and add to the mixture alternately with the milk.
Lastly add the the vinegar,mix it in well.

Spoon the mix. into a greased 2 litre ovenproof dish with a lid.
Pour over 1/2 the sauce ,cover and bake for 20 -30 mins.
Now pour in the balance of the sauce and bake uncovered for about 10-15mins or until the centre of the pudding is cooked but the sauce must bubble around the sides.
Serve the pudding hot.

It freezes very well after it's baked and cool.
Pop in the micro. before serving.
I serve this with double thick cream or ice-cream.

For chocolate malva pudding reduce the flour to 250ml and add 50ml cocoa.
For the sauce add 50ml cocoa to the rest of ing.

Ancienne recette de la ville de Bordeaux, petit gateau cuit dans des petits moules canneles; croustillant et caramelise a l'exterieur, fondant a l'interieur / Old recipe from the town of Bordeaux, S.W. France. Little cakes baked in special small moulds; crusty outside and soft inside.

100 g de farine / 0,25 pound flour
100 g de sucre / 0,25 pound caster sugar
25 g de beurre / 0,05 pound butter
25 cl de lait / 9 oz milk
2 ?ufs / 2 eggs
? cuillere a soupe de rhum / ? tablespoon rum
1 gousse de vanille / 1 vanilla pod

Faire chauffer le lait avec le beurre et la vanille 2 minutes au micro-ondes / Heat milk, butter and vanilla pod 2 minutes in microwaves oven

Melanger la farine et le sucre / Mix flour and sugar
Ajouter les 2 ?ufs et melanger / Add the 2 eggs and mix
Verser le lait, melanger /Pour the milk, mix
Ajouter le rhum / Add the rum
Beurrer et sucrer les moules / Put butter and sugar in moulds
Verser la pate refroidie 1 h au frigo / Pour the dough refrigerated 1 h in fridge
Cuire 1 h a 220°C / Bake 1 hour at 430°F
